Black Bean Rice

Hello!

Today, I have to share a simple, but delicious recipe that is quite allergy friendly and family friendly. I love to make this recipe for the week. It’s an easy recipe to eat as is, mix it up, or combine with another meal to make complete!  My favorite way to eat this recipe is as a pick-me-up snack, if I’m lucky, or to put it in a corn taco shell topped with a lil bit of salsa to make a meal!  Either way,  it’s a quick and easy recipe that is quite versatile. I hope you enjoy!  This recipe is free of the top ten allergens!

Serves: 4

INGREDIENTS:

  •  1 (16 ounce) can black beans
  •  1 small onion, chopped
  •  1 clove garlic, chopped
  •  1 teaspoon of oregano
  •  1/4 teaspoon cayenne pepper
  •  1/4 teaspoon of salt
  • 1 cup of cooked white or brown rice

INSTRUCTIONS:

  1. In a medium saucepan, combine beans, onion, and garlic, and bring to a boil. Reduce heat to medium-low. Season with Oregano, cayenne, and salt. Simmer for 5 minutes. Mix with a cup of white or brown rice.
